Our family’s favourite banana muffin recipe 🍌

This is our family’s go-to healthy banana muffins. Based on a recipe by JSHealth. We make a big batch each week and keep them in the fridge for the perfect afternoon tea snack or breaky on the run (if Brad hasn’t eaten them all already 🤦🏼‍♀️)

 

Ingredients:
2 cups almond meal
2 tsp baking soda
2 Tbsp cinnamon 
2-3 ripe banana
1 cup dates pitted & chopped
3 eggs
1/4 cup melted coconut oil
3/4 cup chopped walnuts (optional) 

 

Method:

  1. Preheat oven 180 degrees
  2. In a large bowl combine almond meal, baking soda and cinnamon
  3. Blend dates, banana, eggs and oil 
  4. Add wet ingredients to dry and mix in large bowl
  5. Fold in nuts (if using)
  6. Spoon mixture into lined muffin tins
  7. Bake for ~25mins
